Crunchy Corn Cereal Chicken Fingers

Ingredients
  • Vegetable oil, for frying
  • 1 c. flour
  • salt and pepper
  • 4 large eggs
  • 2 cups Cap'n Crunch cereal
  • 1# boneless skinless chicken breasts, cut into 1 inch strips
  • ½ c. ketchup
  • ¼ c. applesauce
  • 2 dashes Worcestershire sauce
Instructions
  1. Heat ¼ inch oil in large skillet over medium-high heat or 350-375 degrees
  2. Put flour salt and pepper into one dish for breading process
  3. beat eggs in another dish
  4. Place cereal in a zip bloc baggie and pound with a pan, meat mallet, or your hands until mostly broken up and fine with a few bigger pieces.
  5. Transfer cereal to a 3rd bowl.
  6. dip chicken strips into the flour, then the egg, then the cereal.
  7. Drop into the hot pre-heated oil and cook for about 3-7 minutes depending on how thick your chicken breasts are.
  8. Drain on paper towels.
  9. Stir together the ketchup, applesauce, and Worcestershire.
  10. Serve strips while still hot with the dipping sauce.
  11. Enjoy!
