Easy 2 Step Fried Rice

- Rice, cooked
- soy sauce
- Mixed vegetables (peas and carrots)
- eggs
- Add olive oil or butter to a skillet over Medium High Heat
- Add your frozen veggies, as much or as little as you like it doesn't have to be precise.
- Saute veggies for a couple minutes until the veggies have some color and have carmelized a little.
- Then add in as much or as little cooked rice as you like.
- Add a couple splashes of soy sauce and saute rice with veggies for a few minutes or until soy really cooks into the rice.
- Next either remove the rice from the pan to cook the eggs
- OR
- Move the rice to the outer parts of the pan forming a well in the center of the pan to scramble
- and cook the eggs.
- Last, incorporate the cooked eggs with the rice.
