Healthy Homemade Pumpkin Pancakes

  • 1 c. flour
  • 1 T. sugar
  • 2 t. baking powder
  • ½ t. cinnamon
  • 1 c. milk
  • 1 egg
  • ¾ c. canned pumpkin
  • ½ c. vanilla/greek yogurt
  • maple syrup
  • whipped topping, optional
Instructions
  1. Combine milk, egg, pumpkin, and yogurt in large bowl.
  2. Add flour, sugar, powder, and cinnamon.
  3. Stir batter until moist.
  4. Add a little more milk if you want a thinner batter and pancake
  5. Heat a non-stick skillet or electric skillet to medium heat.
  6. Spoon batter onto skillet and cook until brown on both sides, flipping half way through.
  7. Enjoy!
